Paros Farming Community is a cooperative of about 30 growers on the Cycladic island of Paros, first established in 1929 and revived to restore the island's viticulture; the group farms roughly 8 hectares of old vines (average age 75-85 years), including rare pre-phylloxera plantings, producing fewer than 60,000 bottles a year under winemaker Dimitris Mansolas. Seiradi Monemvasia is 100% Monemvasia, fermented in stainless steel at low temperature and aged on its lees for three months with weekly bâtonnage. 13.5% ABV.
