About the Wine

The blend includes 52% Counoise, 33% Grenache, and 15% Cinsault. Grenache Noir (red Grenache) was hand-picked by our entire cellar and vineyard team on September 15, 2023. This marked the beginning of our vintage as this was the first fruit in the door. Counoise and Cinsault followed in the subsequent days and weeks. All three lots were gently whole cluster pressed upon arrival at the winery. We utilized a champagne style press cycle which allowed us to capture only the most fragrant free run juices without any bitter or astringent elements that can come with harder pressing. Immediately after pressing, the juices were cold settled for 48 hours in an open tank to ensure that the color of the finished wine would not be susceptible to oxidation. By fermenting these juices at very low temperatures, we prevent any of the lighter and more nuanced aromas from being "blown off". Once all three tanks of Grenache, Cinsault and Counoise were dry, the resulting wines were sulfited as they were transferred to neutral French Oak barrels to age until early spring. The final blend of 2023 Rosé was assembled in early March of 2024. Our Rosé was heat and cold stabilized and filtered prior to bottling. We hope this wine will provide crisp refreshment on warm Paso Robles summer days.

Tasting Notes

This beautiful coral/pink Rosé boasts intense aromas of straberries, guava, flint and honeysuckle. Lemon zest plays on the red currants, strawberries and cream, lychee and butterscotch that are moderated by gorgeous minerality. The flavors lead the way to a long, mouth-watering finish that features hints of petrichor, honey, and delicate acidity.

Pairing Notes

This wine is so versatile. It is just amazing with a Butternut Squash Soup and a Shaved Brussels Sprout Salad.
