Domaine Cheveau is a family estate in Solutré-Pouilly, in the heart of Burgundy's Pouilly-Fuissé appellation, founded by André Cheveau and carried on by his son Michel and today's generation, Julien and Nicolas Cheveau together with Nicolas's wife Aurélie, who farm some 20 hectares with an emphasis on ethical, terroir-driven winemaking (the estate earned Premier Cru recognition for its Pouilly-Fuissé wines in 2020). Their Pouilly-Fuissé Sur la Rochette, grown on hard limestone soils in vines planted in 1974 in the commune of Solutré-Pouilly facing the Roche de Solutré, is presented by the domaine as the purest expression of the appellation: manually harvested and vinified with natural yeasts, left unfined, and matured for 14 months in 600-litre barrels.
Tasting Notes
The wine shows notes of acacia flowers and white fruits, with a balance between structure, fruit, and freshness; the domaine notes it can be enjoyed in its youth or cellared for five to six years.
Pairing Recommendation
As a classic Pouilly-Fuissé, it suits seafood, shellfish, and poultry.
