Champagne is France's northernmost major wine region, and its chalky subsoil and cool, marginal climate give the region's wines their characteristic high acidity and fine, persistent mousse; grower-Champagne producers like Gonet-Médeville typically farm parcels across several crus and vinify them separately to let each site's character show through, rather than blending toward a single uniform house style.
