About the Wine
Dry farmed Grenache, Syrah and Mourvèdre at Mustang Springs Ranch were all picked separately during a very condensed vintage. It was good fortune and some careful planning which ensured that these grapes all arrived in the cellar during the early days of our record heat wave in late August and early September of 2022. Grenache, Syrah, and Mourvèdre were separately destemmed and fermented natively in macro bins, receiving 2-3 gentle punch downs per day until dry. A portion of the Jump Hill Syrah was fermented in new French Oak puncheons. Additionally, a small amount of Syrah from Thibido Vineyard was fermented with roughly 20% whole cluster inclusion and 100 lbs. of destemmed Viognier sprinkled on top of the native fermentation in a single French oak puncheon. Upon pressing, all of the wines were barreled down into 20% new, 80% neutral French oak, and allowed to progress through malolactic fermentation separately. The final GSM blend was assembled in July of 2023 before being returned to a selection of 25% new and 75% neutral French oak to age until bottling in March of 2024. VINEYARDS: 90% Mustang Springs Ranch, 10% Thibido Vineyard

Tasting Notes
While the medium ruby color of this Chateauneuf influenced blend might be the first thing you notice upon pouring a glass, you’re sure to be taken aback by the bouquet of aromas coming from the wine. Ripe strawberries, Bing cherries, espresso, rhubarb, and tobacco prepare you for what is sure to be a mouthful. On the palate, tar and black olives give way to red currants, cranberries, star anise, cinnamon, and orange peels. A long spicy finish that tends towards blueberries and tobacco features silky tannins.

Pairing Notes
Foie Gras, with its rich bold flavors and smooth texture, is the perfect pairing with our GSM.
