About the Wine
Grenache Blanc, Viognier, Roussanne and Picpoul Blanc grapes sourced from four different vineyards across Paso Robles were hand picked in the early hours of the morning on their respective pick dates. The blend includes: 43% Grenache Blanc, 23% Viognier, 20% Roussanne, and 14% Picpoul Blanc. Once delivered to the winery, all four lots of grapes were gently loaded in the press for whole cluster pressing. The free run juices were separated from the harder press fractions; Roussanne and Viognier were fermented in stainless steel tanks where we could closely monitor temperatures. Grenache Blanc was fermented in a concrete pyramid. Picpoul Blanc was fermented in neutral French Oak barrels. As the fermenting juices approached dryness, temperatures were allowed to creep up to ensure the wines produced would be bone dry. After fermentation, Roussanne and Viognier were carefully racked into neutral French Oak barrels. Picpoul Blanc was almost immediately blended with Grenache Blanc in order to fill the concrete pyramid for aging. The blend that made its way into the bottle was assembled at the end of February 2024. This wine was heat and cold stabilized in tank and filtered prior to being bottled to ensure a beautiful, crisp, and clear result in your glass.

Tasting Notes
This pale, straw colored wine means spring has sprung. A nose full of honeysuckle, lemon zest, peach pit and just enough flinty concrete welcomes the season. One sip and your palate is flooded by lemon zest, guava and green apples. The hints of limestone and flint help to balance the crisp acidity and full weight of this bone-dry wine. A focused lemon-bar finish will leave you coming back for another sip.
