Phifer Pavitt began with Date Night. After marrying in 1998, Suzanne and Shane Pavitt created a weekly tradition: once a week, typically over a bottle of wine or bourbon, they would voice their hopes, fears, wants and wishes. Every big decision since has been made on Date Night - including the decision to buy a 23-acre plot in Calistoga, at the northern end of Napa Valley. They planted the vineyards by hand, rooted themselves in a farming community and started a family. The estate farms with sustainability as its compass and holds Napa Green Certification, with an Eco Barn, butterfly garden and regenerative farming practices.
