Phifer Pavitt began with Date Night. After marrying in 1998, Suzanne and Shane Pavitt created a weekly tradition: once a week, typically over a bottle of wine or bourbon, they would voice their hopes, fears, wants and wishes. Every big decision since has been made on Date Night - including the decision to buy a 23-acre plot in Calistoga, at the northern end of Napa Valley. They planted the vineyards by hand, rooted themselves in a farming community and started a family. The estate farms with sustainability as its compass and holds Napa Green Certification, with an Eco Barn, butterfly garden and regenerative farming practices. Reserve Petit Verdot is a varietal bottling of a grape more often used in blends, labelled Napa Valley and released in 750ml.
Tasting Notes
Deep, radiant purple in the glass, with expressive aromas that leap forward. Black cherry juice and baked plum lead into blackberry and fig jam, lifted by hints of lilac and lavender. Layers of Madagascar vanilla, cherry marzipan, and almond roca mingle with subtle notes of black tea, espresso bean, roasted herbs, and chocolate ganache. On the palate, the texture is velvety and rich, with waves of blackberry and blueberry wrapped in dark chocolate and a touch of maple warmth. Complex and beautifully balanced, the wine carries depth and elegance through a long, polished finish.
