Profile & Story
Florian Mathieu is an independent winemaker and negociant in the Languedoc, working with a selection of old vines grown on limestone soils on the plateau of Aspiran. Farming is organic, and his cuvees favor a modern, low-intervention approach to traditional southern French winemaking. This skin-contact blend of Grenache Blanc, Roussanne and Marsanne spends time on its skins before finishing in stainless steel, then is bottled unfined and only minimally filtered.
Tasting Notes
Golden amber in the glass with copper reflections. The nose offers orange peel, dried apricot and quince alongside honey, spice and tea leaf notes, with a mineral edge. The palate is structured and textural, with lively acidity and gentle tannins carrying flavors of citrus zest, dried fruit and chamomile through to a long, dry, slightly savory finish.
