Vietti is a historic estate in Castiglione Falletto, Piedmont, one of the Barolo zone's most respected producers. Their Moscato d'Asti is 100% Moscato sourced from small vineyards in Castiglione Tinella, planted on Guyot-trained vines averaging forty years old, grown on limestone- and clay-rich soil. The grapes are gently pressed and cold-settled, with small portions fermented in an autoclave at low temperature until reaching about 5.5% alcohol, then rapidly chilled to halt fermentation and filtered. The wine skips malolactic fermentation entirely, preserving its natural freshness and aromatics.
