Profile & Story
Ciavolich, founded in 1853, is one of Abruzzo's oldest wine estates, today led by Chiara Ciavolich and farming native varieties between Loreto Aprutino and Miglianico. Fosso Cancelli is their Pecorino, Colline Pescaresi IGP, grown across the Pianella and Loreto Aprutino sites at 250 meters on loam-clay soil. The grapes are crushed and pressed with a small crusher-destemmer and an old press; the must is split between terracotta amphorae and old French oak tonneaux, fermented with a pied-de-cuve of indigenous yeast over seven to ten days, then aged on fine lees in Slavonian oak and terracotta for about two years before bottling unfiltered.

An amphora- and tonneau-aged Pecorino built for texture and complexity, reflecting its extended lees aging and mixed-vessel vinification.
