Founded by Marc Ollivier in the hamlet of La Pépière (Maisdon-sur-Sèvre), a benchmark Muscadet estate farming certified-organic/biodynamic. 100% Melon de Bourgogne on granite (with some gneiss), combining the estate's Clisson-cru core, Château Thébaud fruit and a neighbour's organic grapes; direct-pressed, native-yeast fermentation, aged on fine lees in glass-lined cement.
Tasting Notes
Pale gold; ripe floral nose of dried pear, quince, fresh herbs, grapefruit and stone; round and refreshing with wet-stone, pear, citrus, almond and mineral notes; finish of citrus, anise and saline minerals.

Oysters, grilled fish, roast chicken, Asian dishes and mild goat cheeses.
