Bosco del Merlo is a Veneto estate whose Prosecco Millesimato Brut is made from Glera grapes (with a small share of Pinot Grigio) grown within the Prosecco DOC, harvested at night when fully ripe. The wine undergoes its second fermentation by the Charmat method at a controlled 16C, reaching 11% ABV.
Tasting Notes
Bright straw yellow with a fruity aroma of apple and pear and delicate shades of wisteria and acacia. Dry and persistent on the palate, with sapid, mineral notes and a lively freshness.
Pairing Recommendation
Excellent as an aperitif and conversation wine; pairs well with fish dishes and light vegetable preparations, such as tagliolini with lemon and prawns or crostini with creamed codfish.
