Weingut Dr. Fischer farms slate-rich sites on the Mosel; its Steinbock line was revived under Martin Foradori Hofstatter in 2014 to produce alcohol-removed wines. The Riesling Zero Sparkling is made from 100% Riesling, gently dealcoholized after fermentation via a low-temperature vacuum process that evaporates the alcohol at 25-30C, leaving under 0.25% ABV while preserving the grape's primary aromas, acidity and minerality.
Tasting Notes
Pale straw gold with lively bubbles, showing green apple, lime zest, white peach and citrus blossom. Bright and refreshing on the palate, lightly off-dry, with crisp apple, lemon, ripe stone fruit and a clean mineral acidity.
