Profile & Story
Fattoria Santa Vittoria lies in the hills of the Valdichiana at Foiano della Chiana, worked by the Niccolai family since 1995. The Vin Santo is a blend of 60% Trebbiano Toscano and 40% Malvasia Lunga del Chianti; bunches are laid out in the vinsantaia for three to four months, then the must is racked into ancient caratelli in an unheated loft for a slow, oxidative fermentation and ageing of four to six years.
Tasting Notes
Amber honey in colour, with a warm, intense and persistent scent opening on dried figs, candied fruit and almond. Great texture, velvety and harmonious, with a precise acidity that balances the sweetness.
