Mimmo and Valeria Costanzo bought their 7-hectare Etna estate in Contrada Santo Spirito, partly within the Parco dell'Etna UNESCO site on the volcano's north slope, in 2000. Mofete (Sicilian dialect for 'it's erupting,' after Etna's geothermal activity) blends 80% Nerello Mascalese and 20% Nerello Cappuccio from estate vineyards, fermented separately by plot with native yeasts and full malolactic, then aged half in steel and half in neutral 50HL Slavonian oak.
