Profile & Story
The grapes are handpicked and the best selection is chosen to produce Capitel de’ Roari. The vineyards are situated on the best hills of Valpolicella Classica, characterized by low production and high The grapes are then dried in a special room called ‘FRUTTAIO’ where the grapes loose 35-40% of the weight and reach about 240g/l of sugar. The grapes are then fermented at a cool-temperature followed by maceration on the skins. The finished wine is aged in big oak barrels, and in new 225l barrels. The Righetti family has been making wine since the first years of the 20th century with the 4th generation at the helm. They own land in all of the valleys that make up the Valpolicella growing region giving them an excellent selection of grapes to make their wines.
Tasting Notes
The wine has a strong red color, which, due to the ageing becomes red-orange. Intense smells with tones of ripe cherry and a dry, velvety and pleasant taste. This wine will age for another 15+ years adding character and flavors from the earth.

The wine pairs well with rich dishes such as game, stews, mushrooms and herbs. It also pairs well with strong cheese.
