Profile & Story
The vineyard is 2.4 hectares with exposure and average altitude: south-southwest / 380 meters a.s.l. The soil is “Diano” sandstone, characteristic of the Tortoniano geological age, young soils with good sustainable hydration, made up of sandy-limestone deposits. It was planted between 1992-2012 with a density of 4.000 vines per hectare and yielding 80 quintals per hectare. The fertilization is organic and compost. The grapes go through the traditional process for red wine vilification and fermentation at temperatures of 28°-30° C in steel tanks then aged in large Slavonian oak casks for a total of 28-30 months. 10 months of bottle aging follows and the wine is unfiltered. The 3rd generation family consists of brother, Andrea, and sister, Chiara, who carry on the family winery. The winery was certified Organic in 2013.
Tasting Notes
The color is an intense, red-granite with orange accents. On the nose, pungent sensations of black pepper, leather and cinnamon are evoked, together with more delicate ones of violet and Spanish cherries. The mouthfeel is tannic to the right degree the with a moderate austerity. The coherence with the olfactory sensations is marked and emerges during the stages of wine tasting.
Pairing Recommendation
The wine pairs best with big flavors. Osso Bucco, Wild Game, Hearty Stews and flavorful risottos, as well as, strong cheeses.
