Profile & Story

Pojer e Sandri is a Trentino estate in Faedo (San Michele all'Adige), founded in 1975 by Mario Pojer and Fiorentino Sandri and dedicated to reviving local grape varieties through minimal-intervention winemaking. To preserve the wine's natural aromas and antioxidants, the grapes are processed by hyper-reduction (fermentation in the absence of oxygen), a technique developed and patented by the estate.

Pairs well with salted fish, shellfish, vegetable creams and mushroom soups, pasta or rice dishes with fish or vegetable sauces, and Trentino cheeses such as Dolomiti or Asiago.
