Iria Otero Mazoy holds a PhD in oenology from the University of La Rioja and established her own winery in 2018, working parcels in Galicia's Rías Baixas and Ribeiro without herbicides or insecticides, relying on vegetable-waste fertilizer and spontaneous fermentation for a natural, minimal-intervention style.
