Thierry Daulhiac took over his family's vineyard in Bergerac in 1992 and founded Château Le Payral; his wife Isabelle, an agronomist, now co-runs the estate, which converted to organic certification in 2005 and achieved Demeter biodynamic certification in 2018. La Bise is an orange-style blend of Muscadelle and Sémillon from sandy clay-limestone soils, fermented with indigenous yeast and aged six months in tank, its name a nod to the "bise" wind.
