Poggio al Sole is an organic estate in Badia a Passignano, Chianti Classico, where winemaker Johannes Davaz began vinifying Sangiovese as a white wine in the early 2010s — a technique with no real precedent at the time — releasing the first vintage in 2013 and becoming one of Tuscany's earliest producers of white Sangiovese. The wine is pressed cold immediately after harvest, skips malolactic fermentation, and rests on its lees until bottling in February for a pale, fruit-driven, dry white.
