Profile & Story

M. Dean Cellars released its first wines in 2023, founded by longtime wine importer Michael Dean with winemaker Alisa ‘AJ’ Jacobson (UC Davis, formerly of Joel Gott Wines). The Cabernet Sauvignon is sourced from vineyards across California with a minority of other Bordeaux varieties blended in; it completes primary fermentation in stainless steel, with 25% aged in new French oak, and is bottled after 10 months. ABV 13.5%.

Tasting Notes

Dark red in color, with aromas of huckleberry, blackberry and spice. Fruit-forward on the palate with subtle tannins and a smooth, full-bodied finish.
