White Blend
Cave Poulet et fils

About the Wine
The blend consists of 75% Muscat Blanc à Petits Grains and 25% Clairette Blanche. Clairette de Die “Tradition” is a naturally sparkling white wine made by Poulet, a 28-hectare family-owned winery located in the Rhône Valley and committed to sustainable practices. The vines, averaging 35 years of age, are planted on chalky-clay slopes and shaly marls at a density of 5,400 vines per hectare, pruned using the Guyot method. The wine is produced using the Méthode Ancestrale, beginning with a mechanical harvest from various terroirs of the estate to emphasize sweetness and aromatic intensity. After a week of settling, fermentation is initiated with indigenous yeasts under temperature control. A second fermentation occurs in the bottle using the grapes’ natural residual sugars, with no addition of tirage or expedition liqueur. The wine is disgorged after four months of aging in bottle. It has an alcohol content of 8.5% and residual sugar between 50–60 g/L.
