About the Wine

This wine is produced from a blend of parcels mainly located in the southern part of the Saint-Joseph appellation, on decomposed granite terroir and silty terraces in the villages of Mauves, Tournon, and Saint-Désirat. The grapes are harvested whole at optimal ripeness and pressed whole-cluster. A light settling is followed by fermentation using indigenous yeasts, predominantly in large wooden barrels (600 L) and foudres (80%, of which 10% are new), with the remaining 20% fermented in stainless steel vats. Ageing is carried out on total lees for 10 months.

Tasting Notes

Colour: Strong yellow with bright green highlights. Nose: Fresh, with delicate notes of white flowers and white-fleshed fruits like peach and pear. The nose also offers delicious aromatic notes underscored by smooth oakiness. Palate: Fresh and well-balanced on entry, with generous volume and dessert-like flavors, followed by mineral tension and a long, lingering finish.

Recommended with pike-perch fillet, crayfish emulsion, mushrooms, and chestnuts. Serve at 10–12°C.
