About the Wine

The blend includes 35% Clairette, 35% Grenache Blanc, and 30% Roussanne. Opale 2022 is a white wine from AOC Cairanne, crafted from a blend of Clairette, Grenache Blanc, and Roussanne. The vineyards are situated on soils rich in limestone and sands with a high percentage of rolled pebbles, and the vines range from 7 to over 80 years old. Grapes were hand-harvested between August 22 and September 7, 2022, with a rigorous selection. The winemaking process includes gentle pneumatic pressing, slow fermentation at 14–17°C in oak barrels (30%), and natural malolactic fermentation. The wine was aged for 12 months, 30% in oak barrels (ranging from new to 7 years old) and 70% in stainless steel tanks. No cultured yeast was used.

Tasting Notes

This is an elegant and generous wine. The nose is airy with aromas of honey and pear. On the palate, it is dense and well-balanced, revealing flavors of white flowers and exotic fruits, with a final touch of autumnal notes like chestnuts.
