About the Wine
This wine is produced from the “Clos de l’Annonciation” plot located in “La Font de Pertus,” facing south at an altitude of 1350 feet. This unique microclimate, known for its sunny days, cool nights, and plentiful underground springs from Mount Ventoux, ensures optimal growing conditions even in dry years. The wine is made exclusively by monks and nuns and only in great vintages when the grapes reach the highest quality. Harvesting is done manually at dawn following nocturnal matins. After draconian sorting by the monks and sisters, the grapes are gently pressed pneumatically without destemming. The must is clarified by cold sedimentation, and fermentation takes place slowly in stainless steel tanks at controlled temperature to highlight the varietal’s aromatic purity. The final blend is aged on fine lees for six months.

Tasting Notes
The wine has a pale, bright yellow appearance. Initially discreet on the nose, it reveals subtle aromas of white flowers, verbena, apricot, pear, and white truffle. On the palate, richness is balanced by a delicate bitterness, interwoven with vegetal notes, fresh almond, and orange syrup. The finish is persistent.
