Produced from 40-year-old vines grown on granite with loam, loess, and limestone debris. Cold-settled for 24 hours before fermentation in vats (40%) and barrels (60%). Aged for 9 months on lees, with malolactic fermentation for 75% of the wine.
Tasting Notes
Bright jasmine yellow with green hints. Aromas of acacia, lime blossom, and chalk. Rich and ample palate with minerality and lemon zest.
Pairing Recommendation
Excellent with fish, white meat, and cheeses like Picodon and Saint Marcellin.
