About the Wine
The blend includes 50% Vermentino, 25% Clairette, 15% Marsanne, and 10% Roussanne. Delicato Blanc 2024 is Mas Edem’s first creation, crafted to express freshness, fruitiness, and delicacy. The wine is made from organically farmed grapes grown at 260 meters altitude on sandy clay-silty soils with a north-northeast exposure. The vineyard is 22 years old and spans 18 hectares, with a yield of 40 hL/ha and a total production of 7,000 bottles. The harvest took place on the 11th and 13th of September 2024. After mechanical harvesting, grapes underwent direct pressing, with fermentation carried out under temperature control in stainless steel vats. Malolactic fermentation was not performed. The wine was filtered during bottling and aged entirely in stainless steel vats. It has an alcohol content of 12.5% and is certified organic (Agriculture Biologique – FR-BIO-01).

Tasting Notes
The wine presents a pale yellow-green color. On the nose, it offers an expressive thiol aroma dominated by citrus fruits and complemented by mineral notes. On the palate, it is well balanced and fresh, echoing the citrus notes and finishing with a pleasant salty touch.

Pairing Notes
Best served chilled at 10–11°C. It pairs well with fish, cheeses, and especially goat cheese.
