Tasting Notes
A joyous wine that celebrates the earthiness of Cabernet combined with the licorice, blackberry and chocolate undertones of Petite Sirah, plus plenty of jovial baking spice. The brilliance of this wine is its railroad track of acidity that leads to a wonderfully chewy finish of cherry and fig bars. Aged in neutral and once used French and American oak for 33 months.
Pairing Recommendation
Pair with short ribs with caramelized onions and polenta; beef or veggie enchiladas with mole negro; eggplant moussaka; bell peppers stuffed with farro, squash, leeks, Fontina and pumpkin seeds.
