Cantina Bovio farms in La Morra, in the heart of Barolo. Il Ciotto is named for the hamlet where the winery is located. Fermentation runs with indigenous yeasts for 8-10 days in temperature-controlled stainless steel, with regular pump-overs for colour and tannin extraction, followed by racking and malolactic fermentation; the wine is stabilised over winter, filtered and bottled in early spring.
