Ca' del Bosco has spent thirty years shaping this wine's identity: it began as Franciacorta Pinot, became Franciacorta Brut N.V. in 1991, and matured into Cuvee Prestige in 2005 after more than three decades of experimentation. A steady reduction in the dosage added at disgorgement, meant to let the grapes speak more clearly, led to the current Edizione naming from the 2017 harvest, so tasters can track the nuances of each release. The blend is Chardonnay, Pinot Bianco and Pinot Nero from 240 certified organic vineyards, aged seven months in temperature-controlled stainless steel, with added sugar of 1.5 g/l (Extra Brut) and total sulfur held to a maximum of 49 mg/l.
