Profile & Story
Biodynamic estate founded in 2005 in Slovenia's Vipava Valley (22 ha across six vineyards). 100% Merlot from younger, high-elevation vines vinified as a blanc de noirs and made sparkling in the traditional method: direct-pressed, spontaneous fermentation, secondary fermentation in bottle using frozen must from the same vintage instead of dosage, ~36 months on lees, disgorged with no liqueur; unfiltered, minimal sulfur. ~12.4% ABV.
Tasting Notes
Pale yellow with amber and rose-copper hues and fine bubbles. Rich, complex nose of pie crust, sweet cherry, nectarine and yellow fruits; elegant, fresh palate of lemon cream and red cherry with a subtle minty minerality and cleansing bubbles.
