Profile & Story
Kapistoni is a boutique qvevri estate near Tbilisi in Kartli, run by Niko Chochishvili, who returned to Georgia in 2010 to make wine. This Tavkveri is fermented on the skins in qvevri for six months with no additives and no filtration; ~12% ABV.
Tasting Notes
Deep ruby; nose of wild blackberry, blueberry and ripe cherry with hints of black pepper; palate of blackberry and cherry with gentle blueberry, elegant tannins and a lingering finish.
Pairing Recommendation
Veal, beef and lamb dishes and hard cheeses; serve 14-20 C.
