Profile & Story
Paraschos is a Greek family farming naturally in San Floriano del Collio (Gorizia), on the Slovenian border. 'Not' is 100% Pinot Grigio from the Slatnik vineyard (brown-clay soil, ~30-year-old vines); spontaneous fermentation on the skins in large vessels, aged on the lees in large Slavonian oak for ~24 months; unfiltered, no added SO2.
Tasting Notes
Intense copper/ramato color; nose of candied and dried fruit with honeyed notes; palate structured, dry and warm with light tannins, good persistence and a return of candied fruit.

Dishes with decisive flavors - for example roast goat or raw tuna.
