Profile & Story

The Gavoty family has farmed its Cabasse estate in the Cotes de Provence since 1806, now run by Roselyne and Herve Gavoty across 110 organically farmed hectares. ‘Grand Classique’ blends roughly 90% Cinsault with Grenache and a touch of Carignan; rather than pressing immediately, the grapes macerate for several hours, with the saignee and first-press juice vinified separately and blended to Roselyne's preferred texture.
