Tasting Notes
This rich, fruit-dominated Cabernet Sauvignon culminates with a spice and earth-laden finish that enhances the experience. On the attack, blackcurrant, blueberry jam, and cacao please the senses. Anise seed, licorice root, caraway, fresh cracked black pepper, and a hint of cedar slide in right behind to tie everything together. On the palate, it’s mouthwatering and juicy, with lots of umami character. Its weight is moderate and it has an understated tannic backbone aimed to please. It’s a joyful wine, meant to be shared with family and friends, enjoyed without pretense. It really showcases what a Livermore Valley Cabernet Sauvignon can be in its most approachable form.

Paired at the 2025 Livermore Valley Taste Our Terroir Food and Wine Competition. Umami Bridge is meant to bridge ocean and vineyard through layers of umami. Shiitake, soy, and seared yellowfin highlight the Cabernet Sauvignon’s fine-grained tannins, while lemon and ginger echo its vibrant acidity. The 2021 vintage’s depth and structure carry the pairing to a clean, enduring finish built on shared structure and flavor.
