JUSTIN Vineyards & Winery was founded in 1981 by Justin and Deborah Baldwin in the Paso Robles AVA of California's Central Coast, where the estate helped pioneer Bordeaux-variety plantings in what was then an unproven region. This Cabernet Sauvignon ferments in stainless steel with twice-daily pump-overs, then ages 14 months in 25% new American oak, finishing at 14.5% ABV.
Tasting Notes
Aromatic and juicy, with red raspberry and black cherry laced with vanilla, soft herbs, and warming spice on the nose. The palate is dry and moderately full-bodied, with bright red plum and ripe cherry framed by velvety tannins and notes of caramel, toasted coconut, fennel, and sage, closing on a long, savory finish.

Recommended with grilled chicken, burgers, and filet mignon.
