Profile & Story
Shvo Vineyards is a small estate founded by winemaker Gaby Sadan in 2007 in Jish (Gush Halav), Upper Galilee, planted at 800m on gravelly flint-clay soil reminiscent of the Loire Valley. The estate farms Syrah, Grenache, Mourvèdre and Barbera, the base for this rosé; grapes are gently pressed for delicate free-run juice, then fermented and aged six months on fine lees in concrete and stainless steel.
