Profile & Story

Philippe Collin, a native of Champagne whose family had made Champagne for generations, moved south to Limoux in 1980 and founded his own 18-hectare domaine on clay-limestone and gravel soils, planting mainly the Champagne varieties rather than the region's traditional Mauzac. The Cuvée Tradition is 50% Chardonnay, 40% Chenin Blanc and 10% Pinot Noir, made by the traditional method with the second fermentation in bottle, and is finished with a low 6 grams per litre of residual sugar, against the 9 to 14 grams typical of Brut Champagne. It is bottled at the domaine at Tourreilles in the Aude, in a region whose sparkling wine records date back to 1531.

Tasting Notes

A balanced, elegant Crémant de Limoux with no rough edges. The Chardonnay gives the wine brightness and a lively acidity, the Chenin Blanc adds richness and texture, and the Pinot Noir adds depth. Given that this is Collin's entry-level sparkling wine, it is impressively balanced and complex.
