Profile & Story

Filipa Pato, daughter of Bairrada's Baga champion Luis Pato, trained as a chemical engineer at Coimbra and worked harvests in Bordeaux, Mendoza and Margaret River before making her first wine under her own label in 2001; she works alongside her husband William Wouters, an Antwerp-born chef and champion sommelier, under the motto printed on every label, Vinhos Autenticos Sem Maquilhagem, authentic wines without make-up. DNMC is a contraction of Dinamica, a nod to the polycultural Bairrada landscape of olive, fig and pine trees whose wildlife and auxiliary insects help protect the vines. The wine is 100% Baga from Demeter-certified biodynamic limestone vineyards close to sea level, hand-picked and completely destemmed, with individual vineyards fermented separately in stainless steel using light extraction over a long skin maceration, the final blend assembled after a short elevage in tank and bottled without any oak.

Tasting Notes

Winemaker's own note: a deeper, brilliant cherry colour with well-present viscosity; a distinguished, elegant, fruit-driven nose with a typical strawberry and damson plum touch, often with nuances of licorice and a slightly spicy edge of black pepper, laurel, thyme and rosemary. The palate is fruity, with a beautiful structure and an almost velvety texture, closing on a very fresh and inviting aftertaste.

Pairing Recommendation

The producer suggests a platter of charcuterie, a crunchy vegetable salad, grilled fish, grilled white meats and poultry, and dry cheeses such as Queijo Sao Jorge, Edam or Mimolette. Serve at 14-16C and preferably aerate before pouring.
