Laurent Lebled makes wine under the name À la Vôtre! in the Touraine area of the Loire Valley, farming organically (not certified) on southeast-facing silica, clay and limestone soils planted with vines 50 to 70 years old. La Sauvignonne is produced within the Touraine appellation but deliberately declassified as Vin de France. Whole clusters of Sauvignon Blanc undergo a full ten-day carbonic maceration in stainless steel before being pressed and racked to fiberglass to age, with no sulfur added at any stage and the wine bottled unfined and unfiltered.
Tasting Notes
A skin-contact Sauvignon Blanc with an orange-gold hue from its carbonic maceration, layering the grape's characteristic aromatic lift with the riper, textured fruit that whole-cluster maceration brings. Restaurant's Notes: This skin-contact Sauvignon Blanc comes from grapes grown in clay and limestone soils. Whole-cluster carbonic maceration in large concrete tanks for 7-12 days, before being pressed and then fermented naturally. Unfined, unfiltered, and with no added sulfur. An aromatic wine with with notes of pear, citrus and tropical fruits. Long finish with moderate tannins and tartness
