Azimut is the organic, easy-drinking line from Cellers de Can Suriol del Castell, the Suriol family's estate in Font-rubí, in the Penedès region of Catalonia. The cava is made in the traditional method from Macabeo, Xarel·lo, and Parellada sourced from the family's own organically farmed vines and those of neighboring growers, fermented with native yeast and aged a minimum of ten months in bottle before being disgorged to order.
Tasting Notes
Crisp and joyful, with a fine, persistent bubble and a nose of green orchard fruit, green apple, and citrus over notes of toasted almond. Pale yellow in the glass, with a soft, elegant palate.
