Profile & Story

Chateau Coujan has been in the Guy family since 1868, now in its fifth generation under Florence Guy, who converted the estate to organic farming in 2008. La Pinot Noir - whose playful nickname "Lapinot" is a pun on the French word for rabbit - comes from 100% Pinot Noir planted on clay-limestone hillsides at 140 meters of elevation in the Saint-Chinian area of the Languedoc. The grapes are hand-harvested, destemmed and undergo spontaneous fermentation in concrete tanks before a light filtration and bottling the following spring with minimal added sulfur.

Tasting Notes

Aromas of red berries with a subtle hint of licorice lead into a juicy, light-bodied palate of raspberry and blackberry, balanced acidity, and a smooth, easygoing finish. Restaurant's Notes: Lapinot is made from 100% organically farmed Pinot noir grapes grown on clay and limestone soils with pebbles, harvested from estate-owned vines planted in 1990. The wine is gently destemmed and crushed, with short maceration and spontaneous fermentation in concrete tanks, followed by spring bottling with minimal sulfur.
