Profile & Story

Jean-Marie Rimbert has farmed his estate in Berlou, in the Saint-Chinian appellation of the Languedoc, organically since 2003. In the cellar he favors minimal intervention, letting wines ferment naturally with wild yeast. Le Petit Cochon, grown on schist soils, is gently crushed with about 36 hours of skin contact to develop its color, then fermented at controlled temperature in earth-sheltered stainless steel tanks before light filtration and a minimal dose of sulfur at bottling. Jean-Marie designed the wine's playful pig label himself.

Tasting Notes

A vividly pink rosé with deep aromas of ultra-ripe crushed red cherries, guava paste, and overripe fig, lifted by a smoky note of sweet herbs. Blood orange and red berry flavors carry through on the palate, framed by a generous minerality. Restaurant's Notes: Grape Cinsault, Grenache. This rosé is vibrant pink in the glass. Deep scents of ultra-ripe crushed red cherries, a nate of guava paste, overripe fig flesh and a pretty, yet smoky note of sweet herbs.
