Profile & Story

Domini del Leone traces back to 1974, when Guido Fidora converted his family estate on the Venice mainland to organic farming, making it one of the oldest organically cultivated estates in the Veneto. This Pinot Grigio is grown on Caranto soil, a dense clay stratification of Pleistocene origin, and trained on the Guyot system. The grapes are hand-harvested and pressed gently to keep the juice pale, since Pinot Grigio's skins actually carry a pink-grey hue. Fermentation and eight months of aging take place in stainless steel. 100% Pinot Grigio, 12.5% ABV, certified organic and vegan.

Tasting Notes

Straw yellow in the glass. The nose is fruity and mineral, with notes of fresh pear and apple and a touch of white flowers. On the palate it is dry, savory and full-bodied, with the same orchard-fruit character carrying through to a clean, elegant finish. Restaurant's Notes: Pinot Grigio grapes are hand-harvested, destemmed, and pressed into stainless steel vats where the wine naturally ferments and ages for 8 months. A rich dry white wine, fresh, with vibrant aromas of pear and apple with hints of flowers. Distinct minerality is the signature of this wine and makes it very versatile
