Field Recordings is led by winemaker and owner Andrew Jones, who sources grapes from vineyards across California's Central Coast, based out of Paso Robles. Salad Days is a pét-nat blend of Colombard, Chenin Blanc, and Chardonnay from certified-organic California vineyards. The base wine ferments naturally in stainless steel for 45 days, then undergoes its secondary, sparkling fermentation in bottle with organic sugar as tirage, and is bottled without disgorging.
Tasting Notes
A raw, vibrant sparkling white with notes of gooseberry, lychee, and Bartlett pear, plus crisp green apple, lemon, and fresh herbs, carried by gentle effervescence and bright acidity. Restaurant's Notes: Sparkling white wine made from Colombard, Chenin, Chardonnay grapes is often categorized as a "Pét-Nat" (pétillant naturel), made from that is known for its light, crisp, refreshing character with pronounced green fruit flavors like green apple and pear, along with citrus notes, making it a perfect aperitif wine
