Profile & Story
Gaspard is a house label from Jenny & Francois Selections, made in exclusive cooperation with a carefully chosen Touraine winemaker, named for that winemaker's favorite cat. The Cabernet Franc comes from 30-50 year old vines on clay and limestone soils, hand-harvested and destemmed, with the juice left in contact with the skins for five to six weeks before a gentle elevage in cement tanks that softens the wine while preserving freshness. It is bottled with a small addition of sulfur after light filtration.
Tasting Notes
Dark cherry and raspberry fruit meet graphite and a touch of green bell pepper on the nose, with bright acidity and earthy undertones carrying through to a fresh, smooth finish. Restaurant's Notes: One of the typical grapes of the area, the Cabernet Franc instantly entices you with its smooth tannins and dark fruit flavors mingled with spicy / earthy undertones. Grapes are destemmed and hand-sorted before being crushed and put into vats. The maceration then takes 5-6 weeks, with regular punchdowns, with indigenous yeast only. Once pressed, the juice spends around a year in concrete tanks
