Profile & Story

Humus is the label of Rodrigo Filipe, a self-taught, former civil-engineer-turned-winemaker who farms 9 hectares of red clay and limestone soils at Quinta do Paco in Encosta da Quinta, an hour north of Lisbon, where cool Atlantic breezes slow ripening and preserve freshness. The Tinto is built around Touriga Nacional, typically alongside Syrah and other native varieties, hand-harvested and sorted, destemmed and pneumatically pressed. It undergoes spontaneous fermentation with indigenous yeast and seven to ten days of maceration in stainless steel, then ages around twelve months in old 500-liter barrels, unfiltered and with no added sulfites.

Tasting Notes

Medium to full-bodied, with distinctive saline, coastal-influenced notes alongside plum, violet and deep, inky fruit. Time in old barrels rounds out the texture and softens the tannins, adding a whisper of oak.
