Profile & Story

Kamara Kioutsouki Estate was founded in 2009 on the slopes of Mygdonia in Oraiokastro, near Thessaloniki in northern Greece, where the Kioutsouki family farms 11 hectares of native varieties. Stalisma is a blend of roughly 80% Malagousia and 20% Xinomavro, hand-harvested and vinified with total respect for the fruit: no added yeasts, minimal racking, and limited filtration and fining. After blending, the wine rests on its fine lees for at least three months before bottling, giving it a textured, savory character true to the estate's low-intervention style.

Tasting Notes

Light yellow in the glass, Stalisma opens with citrus and bergamot, a lift of jasmine, and herbal, green-apple and lime notes carried through by its extended lees aging. The palate is fresh and saline with a gentle textural weight from the lees contact, finishing clean and appetizing. Restaurant's Notes: The lush bergamot-herbal aromatics of the shortly-macerated Malagousia is savvily combined with Xinomavro's class and freshness.
